I can confirm that this is a XeTeX issue, not fontspec. (E.g.,
\def\testfont{Apple Symbols}
\font\1="\testfont"\1 Regular
\font\1="\testfont/I"\1 Italic?

in Plain XeTeX).
You'll notice that for a font like Skia, which doesn't have bold or
italic, \fontspec still works fine... :)
Regarding the OpenType business, though, I'm still a bit confused.
Actually, the font that doesn't work for me is Warnock Pro, and I've
had reports that "Minion Pro" also fails -- but (more up-to-date,
maybe?) versions of fonts such as "Adobe Caslon Pro" work fine.
